Happy Father's Day Pot Roast

Happy Father's Day to everyone $who->isa('Father') (whether or not your corner of the world celebrates this non-holiday :-) It just isn't a proper father's day though, w/o a delicious meal w/beer in it (hey, if I have to cook on Father's Day, it's going to have beer in it :), so here's my easy, just throw it all in a crockpot recipe (all measures approximate):

  • 1 medium (brown) onion
  • 2-3 large carrots
  • 1/2 lb. mushrooms
  • 2-3 medium potatoes
  • 2 slices thick bacon cut up(optional)
  • 1-2 garlic cloves chopped small (or garlic powder)
  • 2-3 lbs. chuck roast
  • 2 tbs. corn starch (optional)
  • 1/4 cup cold water
  • 1 pt. stout (Young's Double Chocolate or Oggi's Black Magic, but Guinness or your own favorite'll do in a pinch)

Wash potatoes, carrots, mushrooms. Peel and chop onion, potatoes, carrots. Big pieces so that those who don't like'em can dig'em out easily (and those who do like'em can find'em easily). The mushrooms I cut in half, but would probably be just as well left whole.

Brown meat on all sides in 2 tbs. vegetable (and/or olive) oil in frying pan. Spray non-stick cooking spray on all sides of crockpot. Spread layer of carrots on bottom. Put meat on top of carrots. Pour 12 oz. of stout over meat, drink remaining 4 oz. (open another one if you're still thirsty). Mix corn starch in water, pour into pot. Spread veggies, garlic, and bacon randomly around and over meat. Cook 6 hrs. (My crockpot has a simple 4/6/8/10 hr. selection button, this is probably 350 degrees if using a dutch oven). Meat should be very tender when done. Eat.

Even people who don't like beer, let alone stout, will love it.
