This cookie recipe is a variation of a recipe by Michael Congdon of the Hopvine Pub in Seattle. It is basic, but very yummy.
Mix the brown sugar, granulated sugar and butter until well blended and creamy. Add the egg and vanilla extract and mix thoroughly.
In a separate bowl, whisk the flour, oats, salt, and baking soda. Then, gradually add the dry mixture to the sugar and butter mixture until well blended.
Add the chocolate chips and nuts to the mixture and mix until evenly distributed.
Preheat the oven to 375 degrees, put some parchment paper on a cookie sheet, then put 1" balls of dough one inch apart on the parchment. Bake for about 13 minutes until the cookies are light golden brown and the edges start to darken.
Makes about 2 dozen. Enjoy!
