The express has the advantage that it starts from Gatwick, so there is plenty of time to board it while it sits in the station. The normal trains come from Brighton, so you don't have that long to get on them and you'll have more "fun" getting luggage past the other passengers. Also you need to work out whether you're looking at train heading to Victoria or London Bridge (the Express only goes to Victoria). But, yes, they are cheaper, and if you know what you're doing no more hassle than the Express. Although I don't usually have a massive problem with luggage because my luggage has legs, rather than pesky little wheels.

The thing that concerns me the most is getting back...:-) My flight back to Portugal is on Monday, at 8:15, IIRC... I'll probably have to get up at 6 or something... or even earlier... ;-(
