My favourite little tools for Mac OS X Jaguar are haxies. There is ClearDock to, well, clear the dock and Metallifizer, which can remove the brushed metal look on iChat etc. Looks much more sane now!

I love the Unsanity "haxies" (although I hate the name "haxies"), but I had some crashes in 10.2 that were apparently linked to one or more of them. Until I've had time to investigate, I've disabled all of them (not that I had many running). I think, though, it was Dock Detox that was causing problems.
