Looks like I'll be spending 2 weeks in Italy pretty soon. I'll be staying about an hour south of Rome, with some co-workers (working, obviously). We'll have the weekend in between off so I might drop by Rome again.
I suggest you to write an email to roma@pm.org, or to the current Roma.pm tzar, to organize an evening with the local mongers. I've heard they know of a few places where you can eat really good food. I'm pretty sure you won't regret it
